A bit about BBQ: it’s NOT grilling!

There is a very distinct difference between the two. Just ask anyone that knows BBQ and they will tell you all about it.

Southern style BBQ is a technique in which meat is cooked at low temperatures (about 225 F) for a long time over indirect heat. The heat source is charcoal and wood. No gas or propane is allowed. The Barn Burner BBQ competition consists of 4 main categories: Beef Brisket, Pork, Chicken, and Ribs. Brisket is cooked for 12-16 hours. Ribs take approximately 6 hours, and chicken approximately 4 hours.

Teams will also compete in a BBQ “Black Box” cook-off. This “Iron Chef” style competition gives these BBQ competitors a chance to show off their more creative side. They will each be presented with a black box with four mystery ingredients. Those ingredients must be incorporated into a single dish and submitted to the judges. Judges will award points based on originality, taste, and presentation. It is sure to be a very tasty battle.

Come down and sample some BBQ! Please keep in mind that the teams are here to compete. During a brief window when, at the top of each hour, they are preparing their food to turn into the judges they will not be offering samples. Just as soon as that is done, they will sample the food that is left and you can taste award-winning BBQ for yourself! Get in line and decide for yourself whose cuisine reigns supreme.
